In my line of work I have the honor of meeting some of the most talented, successful and innovative women out there. One of my dear clients and friend Candace Nelson creator of SPRINKLES Cupcakes was awesome enough to let me interview her the day her new Ice Cream shoppe which opened directly next door to her cupcake shoppe in Beverly Hills. I just had to know where the genius idea of a CUPCAKE EMPIRE came from! So here we are, thank you Candace!
P.S. My favorite part of the new shoppe is the quote Candace had painted in red on the white walls, “Rodeo Drive is like a giant Butterscotch sundae”-Andy Warhol.
How did you get into cupcakes?
After graduating my pastry program, I began a custom cake business out of my home. I soon came to realize that special occasion cakes were, by definition, rare orders. Having been brought up in the tradition that dessert should be a daily indulgence, I began to focus on cupcakes instead of cakes!
How did you get the name sprinkles?
I was walking through the airport one day when it just came to me! “Sprinkles” was playful and fun, like the concept I had envisioned.
How long has sprinkles been open? How many shops do you have?
Our original bakery (also the world’s first cupcake bakery) opened in Beverly Hills in April of 2005. Since then we have opened a total of 10 cupcake bakeries, a traveling Sprinklesmobile, a Cupcake ATM and an ice cream shop! More Sprinkles locations are on the horizon domestically and abroad!
Your new “Ice Cream” shoppe opened today May 24th, it was slammed today. Where did the “Ice Cream” shoppe concept come from??
Since opening Sprinkles Cupcakes, I have had my heart set on elevating other classic American desserts. I worked on the ice cream concept for several years and am excited to have opened last week!
What’s your favorite flavor of ice cream?
I’m a chocoholic so it’s definitely our rich, fudgy triple chocolate!
Did you go to culinary school?
I went to Tante Marie’s Professional Pastry Program in San Francisco.
What are you most passionate about?
My family – my husband and 2 young sons.
What drives you?
I love what I do! Baking and desserts are truly my passion!
Tell me something about yourself anything at all.
I grew up overseas in Indonesia and Singapore. While there, I really missed and craved the traditional American desserts I used to eat in the US. Since I couldn’t find chocolate chip cookies, brownies and cupcakes in Indonesia, I had to bake them myself. This was the beginning of my passion for baking American desserts! -Candace Nelson
long line outside as always

Okay, I need to put my objective journalist hat on and ask:
Since you have kids, what are your feelings on kids and sugar and how long before they sleep to you cut off the sugar?
Sprinkles opening an ice cream shop is like a dream come true!
